Oatmeal Cookies- My new breakfast

These cookies have become my new breakfast at work, however I did modify the recipe a little. I use one package any flavor weight control oatmeal and mix it with a half a smashed banana and just enough water to mix it. I don't add the baking powder. YUMMY, I eat them at my desk!!!! But I know that they are good for me as there is no flour or added sugar in them!!!

4 oatmeal cookies for 2 POINTS & Core1 container WW Apple Cinnamon Oatmeal OR Maple Brown Sugar Oatmeal1/2 tsp. of baking powder (optional)Gradually stir in about 1/4 to 1/3 cup water, until it is the consistency of oatmeal cookie dough.Split the mixture into 4Drop on a baking sheet sprayed with nonstick cooking spray Bake at 350 F until firm, about 15 minutes Add the 1/2 tsp. of baking powder if you wish because, having no flour, this is a very dense and moist cookie, and I do think it lightened it up a bit. What I like best about this is if you need to have breakfast on the go, it's a hand-held oatmeal breakfast.

SNOW= NO GYM

Ha ha I got you, I actually planned on Wednesday night that I was going to take Thursday off from the gym!!! I have went 5 days in a row and am using today as a break day. This is how the day went. I got up at 6:05 and new that I would not make it downstairs to the bathroom so I went upstairs, I turned the light on!!! OOPS. When I went to go downstairs to shower I did not turn the lights on, I almost fell down the steps and almost took the bookshelf with me!!! Great start to the day!!! I get to work and realize I am not working with my regular partners, I got the NEWBIES!! Great!! Then I decide I should sign up for overtime, first I get an hour, then 8 hours, which I traded for 2 hours and at 5:00 they tried to hit me with 8 again. I would have stayed but it was in a crappy place. Off to brave the 5 minute drive home. Lucky for me there wasn't a car parked in front of me so I could just drive out of my parking spot if I would have had to back out I would have gotten stuck, the snow was up to my TRUNK!! They plowed some of the lot and left a ridge behind my car plus it continued to snow and was blowing in that direction!!! Great!! I got home and I had told Pat I would shovel, that was my workout for the night. I did about a fourth of the driveway and said "forget this"!!! That is what I pay an extra 105.00 a month for association fees for!! I told Pat what I did and he said he would do the rest when he got home, by that time there is going to be way more, so "good luck with that" My hope for tomorrow is to hit Body Pump again and do the kickboxing class. I am 99% sure that if I don't get called into work at 3am that I will be staying past 3 tomorrow, so not sure if my plans will pan out. Hope so!!! Now if I could only get my eating under control I would be in good shape!!!!

Wednesday workout!

I actually made it to the gym as planned, I ran for 30 minutes 2.75 miles then went to the Body Pump class!! I swear those weights get heavier and heavier. After you go a few times isn't it suppose to get easier????? My arms were sore after the class, but that must be a good thing!!

I DVR'd The Biggest Loser so I could watch it when I got home, it really is amazing that I went to the gym knowing it was going to be on!! Why did they not kick Ron off? I wish I could lose 10lbs in a week!!!!

Chicken Pot Pie

Main Dish: WW CHICKEN POT PIE - Thanks Sandra S!
5 Points, 6 servingsYou can make a chicken pot pie or substitute 1 lb beef (browned) & beef broth instead of chickenbutter flavored cooking spray1 tsp butter2 cups chopped onions - nuke 4 min.2 cups sliced mushrooms (2-3 cans drained) nuke 2 min.1/4 tsp paprika1/4 tsp crushed thyme1/4 tsp black pepper1/2 tsp salt (or more)2 cups frozen vegetables - your choice1 cup chicken broth3 cups cooked, diced chicken breasts (season w/Johnny's seasoning salt)1 1/2 Tbsp cornstarch1/2 cup fat-free evaporated milk - divided (Sandra freezes the rest in a covered container)4-6 rolls reduced-fat crescent roll dough, UNROLLEDPreheat oven to 375. Spray large shallow baking dish w/cooking spray. Coat large pan with cooking spray. Melt butter over medium heat. Add onions, mushrooms - cook until tender. Add spices, frozen vegetables, broth, chicken. Cover. Bring to low boil. Cook 15 min. (veg are tender). In small container, mix cornstarch & 1/4 C evap. milk. Add to chicken mixture & stir constantly, about 2 minutes. Mixture starts to thicken. Add 1/4 more cup of evaporated milk. Stir & cook another 2-3 min. Pour into greased baking dish. Unroll dough & layer over top to form crust. Leave holes for steam. Bake until rolls are golden brown, about 12-15 minutes. Cut into 6 pieces & serve.
P.S 4-6 Rolls of crescent roll dough does not mean 4-6 cans, it means 4-6 pieces. I did buy 4 cans but only used one, then when I told Pat," I don't know why you would need 4-6 cans for this", he laughed and explained it to me!!! I may never become Martha Stewart at this rate!!

Tuesday workout

I was at the gym by 9:15 today, crazy, I don't usually get up that early when I am off. I was suppose to have an easy workout doing the New Leaf training, heart beat from 139-154, however I started out good but then lately when I raise the incline on the treadmill it kills my legs and knees so it is easier for me to run at a slower pace than walk at slow pace with a high incline. So I ran at a 5.0 with an incline of .50 for 35 MINUTES STRAIGHT, other than jumping off twice to readjust my heart rate monitor. ( I just really wanted all the people working out to get a free show of fat, don't worry no one died) I did not intend to do this but I had to get my heart rate up so I started running and it got to where it needed to be, but then it kept increasing and I kept running. I haven't ran that long without stopping in months. It felt really good. I finished 45 minutes and 3.50 miles, so it was a good workout!! My hope for tomorrow is to do my New Leaf training and go to the Body Pump class. This will all depend on what time I get off work. We just hired a bunch of new part-time people who have finished their training and are ready to work the floor so the overtime is drying up a little. Don't worry when summer hits I will get all the overtime I want or don't want. These people are all talk about getting as many hours as they can but when summer hits, they change their minds and realize being outside on a 80 degree day is much better than being at work with a bunch of idiots!!! (No, I am not talking about myself when I say idiots either) I know that is what you were thinking.

Monday Workout!!

I had planned to do my New Leaf training then hit the Body Pump class, however I just went to the Body Pump class at 6:40. I am fine with just doing that, I think my brain is starting to realize that I don't need to do "all or nothing" every time I go to the gym. The other part of this is that the scale just isn't moving, I am "maintaining my weight" so what is the point? I would love for it to move down but I am to the point where I still want to lose but I am sick of trying so dang hard!!! The chicken pot pie was great, I will post the recipe.

Sunday workout!

I went to the gym with Pat this morning, thinking I am not going to do my new leaf interval training today because I am Lazy and don't feel like it and I am super sore from Body Pump yesterday. Well I did it and it felt great!!!! I can hardly move right now because I am SUPER SUPER SORE, but I guess that is the trade off for doing the workout!!! I am making a WW chicken pot pie for supper, so I will let you know how that turns and and if it tastes good. It was really easy so I will keep my fingers crossed!!!
